Lori's Original Oven Taco Recipe

Need a Fast and Easy Recipe - this one is sure to please. When all the kids were living at home (we are talking 3 teenagers - 2 of them boys), I needed fast, easy recipes that were also a crowd pleaser.

Lori's Oven Tacos

Ingredients
Ground Beef
Salsa (we use the jar salsa - Mild Type Salsa)
Taco Seasoning Mix (optional, but it adds flavor)
1/4 c water (use only if you choose the seasoning mix option)
Taco Cheese
Tortilla type shells

Extras, if desired: Lettuce, Sour Cream

Brown ground beef and Drain. Mix in salsa, seasoning mix and water. Spoon the beef/salsa mix into the soft shells and place shells in a 13" x 9" pan. You will be stacking the shells horizontally so that there is a soft fold (like a regular taco). Just keep doing this until all the beef/salsa mix has been used. You can then add your taco cheese - as much or as little as desired. Bake in oven at 375 degrees until shells are lightly brown.

Let cool for a few minutes and add your own toppings - lettuce, sour cream, etc.

On another note, when my 2 boys were high school, they played varsity football and each family took a turn cooking for the entire varsity football team. I made these at one of the dinners and we didn't have any leftovers.

Inspirations

Inspirations can come from anywhere. Look around you - everything can be an inspiration.

Inspirations can be found outside. A rainbow in the sky after a very stormy day, flowers in the garden, first snowfall of the year or taking a hike in the woods. Or inspirations can be found inside. Inside the pages of a magazine, looking at a hanging quilt, vintage items at the flea market or even the pages of a calendar.

Inspirations can be seen in the newborn baby or an elderly person learning something new or teaching something to others. Inspirations can be heard. I am inspired in the funny things my daughter says, my older children inspire me by taking their own steps out into the big world or when my husband says "I love you" after I've had a very long, tiring day.

Inspirations come from my granddaughters. Baby L when she laughs at the toy duck, my oldest granddaughter, Goof, as she learns new things or just needs a hug from Mamaw and the newest unborn granddaughter as she kicks her mom because she wants to get out of there and meet the rest of the family.

Inspirations can be heard and seen when I talk to my daughters or daughter-in-laws. Listening to them share their stories or worries, questions when they think someone is upset with them or watching them play with their siblings, own kids or nieces.

Inspirations are also heard and seen when I get a few moments with my older boys, who are actually men now. Watching and listening as they share ideas with their dad. Watching them as they've grown up and make strides into fatherhood.

Inspirations are found when you receive a touching email from a friend or sharing a laugh with someone close to you. Having someone to give you a shoulder to cry on or laugh hysterically with over nothing really.

You can find inspiration in each and every day, in every season or in many ways, shapes and forms.

More than a Minivan ... Meet Nelli

Well we did it...we are now the proud owners of a new (to us) SUV. I have been driving a minivan for so many years that I was forgot what else is out there. I have always wanted a Yukon Denali (well for the last 2 years anyways). So on Saturday, we went looking. We were originally looking at a red Yukon Denali, but we didn't like it. I'm not really a "red" person kind of vehicle and it didn't have enough storage space in the back.

But there sitting two cars down from the red one was a BLACK Yukon Denali XL - fully loaded. It has everything - Navigation, Heated Lumbar Seats, XM Radio, Power Sunroof, DVD entertainment system (we need something to occupy the tween when we are traveling) and so much more! Same price as the red one...hmm didn't take much to convince us to purchase this one.

Last night, hubby and I were talking and he wanted to know what I was going to call it. After all, it's not a minivan, or a car, or a truck...so what to call it? SUV just seems like such a long name. I decided to call her "Nelli" - so much better than saying - go get in the vehicle or that thing in the driveway :-)!
